The eggs are the sticky part. One egg times 1.5 is 1.5 eggs, and you cannot cut a shell in half accurately. Matching the Pan to the New Yield
For anything baked in a pan, the batter has to fit. Compare pans by area, not by their name. Why Bakers Scale by Weight (Baker's Percentage)
Professional kitchens rarely scale by cups. They use baker's percentage, where flour is fixed at 100% and every other ingredient is a percentage of the flour weight. A basic lean loaf reads: flour 500 g (100%), water 325 g (65%), salt 10 g (2%), instant yeast 5 g (1%). To make one and a half loaves you multiply the flour to 750 g and keep the same percentages, so water becomes 488 g and salt 15 g. Weight avoids the scooping error that plagues cups, which is why hydration and salt stay consistent batch after batch.
Where Linear Scaling Breaks Down
- Below 0.5x: leavening and salt hit measuring limits. A quarter of 1 teaspoon is hard to portion; use a 1/8 tsp spoon or pinch by feel rather than trusting the math.
- Above 4x: a home stand mixer bowl tops out around 8 to 10 cups of flour. Past that, split the dough and mix in separate batches so it kneads evenly.
- Salt, cayenne, and other strong flavors: use about 1.5x when a recipe doubles, then taste before adding the rest.
- Gelatin and pectin: scale to the exact liquid volume, since a little extra sets the mixture too firm.
